A delicious vegatable soup with parsnips, carotts, tomatoes, garlic, and caramalised onions to warm you up during the cold days.

Peel and cut your parsnips and carrotts. (Dont cut the parsnips or carotts too thin as you dont want them to burn) then cover the parnips and carotts with olive oil and a teaspoon of rock salt. Then, roast the parnips for 40 minutes on 200c/180c for fan

In the last 20 minutes of roasting, add the tomatoes to the roasting pan with the parnips and carotts.

Whilst the veg is roasting, slice your onion, add butter and oil so that the butter doesnt burn in the pan, 1 teaspoon of brown sugar and a pinch of salt,and your garlic and cook the onion until it has caramalised (I used red onion in this recipe as i had no yellow onion)

Once the veg and onion have cooked, place all the veg and onion into a blender, along with the basil and parsley and 1 litre of vegetable stock.

Once blended, pour into a saucepan and let it simmer.
Add any seasonings of your choice to add more flavour.
And serve with a crusty bread roll.
