Was reeeeeaaaaally craving for beef noodles (cause I went to a restaurant for that and it wasn’t satisfying at all) so decided to made it myself the next day. Got wild apples from farmers market, which is THE (well-known) secret for tasty clear broth of the beef noodles.

Ingredients

  1. Beef shin with bone (350g)
  2. handmade noodles 320g (80g each)
  3. soup base - vegetables
  4. 2carrots
  5. 1onion
  6. 1apple
  7. sprigscallion1
  8. some slices of ginger
  9. stew pack - spices
  10. 1-2bay leaves
  11. 1-2cloves
  12. 1-2star anise
  13. 1cinnamon stick
  14. 10 gwhite peppercorns

Cooking Instructions

    Prep -
    Dice shin, place bone aside, roughly cut onion, carrots and halve the apple

    Char -
    Heat a glug of oil in a stew pot over medium heat. Char onions, then lightly grill diced beef.

    Cook soup -
    Add all soup base vegetables (onion, carrot and apple), spice pack, scallion, ginger and the bone to the pot, cover with cold filtered water. Bring to boil.

    Taste/ Chill -
    Adjust soup taste. Add some salt if needed. Off heat for at least 30 minutes. This is important cause this step let’s the meat rest. Ideally, leave the whole pot over night.

    Boil/ Serve -
    When ready to serve, bring the soup back to boil. Add cooked noodles and some green leaves/ finely chopped scallions for garnish.
