Just when I thought spring was coming, it got cold again, so I pulled together this yummy and comforting mid week meal, packed with goodness. I used veggie sausages but meat ones would work too.

Just when I thought spring was coming, it got cold again, so I pulled together this yummy and comforting mid week meal, packed with goodness. I used veggie sausages but meat ones would work too.

Heat the oven to 180 degrees and cook the sausages

Then heat a tbsp oil in an ovenproof casserole dish with a lid. Sauté the onion, celery and carrot for 10 minute. Then add the garlic, potatoes and herbs/spices and fry for another couple of minutes.

Add the pulses, tomato purée, chopped tomatoes and stock and give everything a good stir. Add the vinegar, sugar and cooked sausages chopped into bite sized pieces. Put the lid on and bake in the oven for 20 minutes.

Remove from the oven, stir in the kale, season to taste and sprinkle with feta. Return to the oven for 10 minutes or until the feta is golden.
