Quick Panettone with Chocolate Chips

This time of year, everyone is in a rush, but we still want to find time to make desserts for the Christmas table or for the holidays. We're always looking for pandoro and panettone. Pandoro already has a long process, so I was searching for a slightly quicker panettone recipe. I found this one on the Al.ta.Cucina website and it turned out perfect. This quick panettone with chocolate chips is more like a brioche bread, but it was just what I needed.
Quick Panettone with Chocolate Chips

Make the starter by dissolving the yeast in the milk. Add the sugar, stir, then add both flours. Knead to form a ball, cover with plastic wrap, and let rise for about 2 hours.

Take the risen starter and dissolve it in the warm milk.

Add the lightly beaten egg yolks, honey, sugar, vanilla, and flour a little at a time, mixing until you get a smooth dough.

Spread the dough out on your work surface and add the softened butter in pieces. Knead until fully incorporated, then add the chocolate chips.

Once the dough is ready, transfer it to a buttered panettone mold and let it rise until it reaches the top of the mold.

Gently score the top with a sharp blade to make a cross. Place a few small pieces of butter in the cuts and bake at 350°F (180°C) for about 45 minutes.

Cover with aluminum foil if it starts to brown too much.

Remove from the oven and let cool completely. For best results, slice it the next day.
