Slice the green onions and mince the ginger. Beat the eggs in a bowl and set aside.

Rinse the oysters thoroughly. Bring a pot of water to a boil, add the oysters, turn off the heat, and let them sit for 30 seconds.

Add the green onions and ginger to the beaten eggs. Season with salt, sugar, and white pepper.

Heat 3 tablespoons of oil in a pan. Pour in the egg mixture and stir toward the center continuously. When the eggs are almost set, add the oysters. Cook until both sides are golden brown.
