Korean Kimbap (김밥)

Recently, I’m watching a Korean variety show called Jinny’s Kitchen on Prime Video. It’s about Korean celebrities opening a restaurant in Balacar, Mexico, selling Korean street food like kimbap and tteokbokki. And it makes me crave for kimbap so much that I decided to make some today.
The one I made today is just a basic version of it with spam. You can add basically any kind of fillings that you want, whether it’s raw or cooked. Best enjoyed with a bowl of instant Korean ramyeon!

Cook the rice like usual. When it’s done, season with salt and sesame oil. Then cover it with a damp cloth.

Prepare the ingredients :
- julienne the carrot.
- beat the eggs and season with salt, white pepper and sesame oil.
- cut the spam into stripes. - 3
For the pickled radish and braised burdock, I just bought them in packet. You can find them in Korean grocery store and it’s okay to omit them.

Let’s start cooking! Heat the pan and add a drizzle of oil. When it’s hot, add the egg mixture and cook until golden brown. After it cooled down, cut them into stripes.

In the same pan, saute the julienned carrot with the leftover oil, season them with salt and pepper.

Then, sweat the spinach and again, season them with salt and pepper.

Finally, pan fry the spam until it’s crispy on the outside. You can do this without any additional oil.

Now, let’s start rolling! Place a seaweed on the mat (It’s okay if you don’t have a mat!) and spread the seasoned rice on top. I like my kimbap with just a thin layer of rice, you can put more if you want!

Layer your ingredients on top in any sequence that you like. Roll them as tight as you can.

After rolling, brush the surface with a layer of sesame oil. You can slice them and sprinkle some sesame seed on top, or you can just munch on them as a whole!
