This might be one of the best sauces I have ever tasted. I was looking for some way to use up some leftover fresh mango purée that I use to make mango margaritas. It is a great sauce for chicken and fish. Not over powering, but sweet with some heat.

Ingredients

6 minutes
1 cup
  1. 3/4 cupfresh mango puréed
  2. 2 Tbspchili pepper infused olive oil (for less heat use a regular oil)
  3. 1large shallot finely diced (can substitute a small onion)
  4. 1jalapeño finely diced (optional for added heat)
  5. 3garlic cloves minced
  6. 4 Tbspfresh lime juice
  7. 2 Tbspmaple syrup
  8. 2 TbspSriracha sauce
  9. 1 TbspDijon mustard
  10. 1/2 tspsalt
  11. 1/2 tspblack pepper

Cooking Instructions

  1. 1

    Add olive oil to a pan and heat on medium. Add onions (and Jalapeño if using) and cook until soft. Add garlic and cook 30 seconds.

    Add all the remaining ingredients; mango, lime juice, sriracha sauce, maple syrup, Dijon mustard, salt and pepper. Simmer for 5 minutes.

    Serve in a small dish or directly on chicken or fish.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
