A tasty idea to enjoy as an appetizer, starter, or for a buffet. They're easy to make and perfect for using up leftover rice from the day before to avoid waste.

Make the sauce (I like to keep it simple, but you can also make a meat sauce). Heat the extra virgin olive oil and sauté the finely chopped onion. Add the tomato purée and beef broth. Season with salt and pepper. Cook the rice in boiling salted water for 10 minutes. Drain and add it to the sauce. Mix well and let it rest.

Cut the mozzarella into small cubes. In a bowl, combine the rice, 2 eggs, and Parmesan cheese. Mix well.

Shape the supplì. With your hands, form a ball of rice into an oval shape and place 3 cubes of mozzarella in the center of each. Dip each supplì in 1 beaten egg, then coat with breadcrumbs.

Fry in hot oil until golden brown.
