Mankish puranpoli

I like Mediterranean food very much because of its simplicity..Mankish is a Mediterranean flatten bread topped with oil based jaatar spice. I have stuffed puran instead of jaatar to give a twist to puran poli. It turned out very delicious. Enjoyed it with falafel, crispy kale leaves , labneh and fresh tomato salad.

Soak both the dals for at least 2 hrs.pressure cook them for 4 to 5 whistles..and simmer it for 5 mnts..be sure not to put too much of water into dals.cook them with minimum water.When it's done add jeggary and churn well with boss to make fine mixture.Take 1 tbs ghee and add puran along with pinch of salt and cook until puran becomes thick.add other spices.

Make dough with wheat flour.Make oval shaped roti.stuff puran into roti and roast it with ghee or bake it in the oven until it becomes golden and crispy.
Garnish it with almond and pistachios flakes.
