Soak black chana overnight. Next day, rinse with water and boil in pressure cooker till whistle blows once. Allow it to cool down Discard the water. Rinse the boiled chana once more with water to remove the dirt.

Boil potatoes. Allow it to cool down to room temperature. Remove the skin and mash it. Add green chili slices, chopped coriander leaves, flour and all the spices. Mix it nicely into fine paste.

Make 6-8 tikias. In a nonstick pan heat oil for shallow frying. Put the raw tikia into the oil. Roast both sides in medium flame till golden brown in color. Collect in a serving plate.

In a frying pan, add oil. Add cumin seed and green chilis for tempering. Add boiled chana. Add all the spices and saute for 2mins with lid. Add 1/2 cup water and cook with lid under medium flame till the water dries out. Collect in a serving bowl.

For preparing tamarind chutney, soak the dry pulp in water for atleast 2hrs. Mix well and discard the hard debris. Add jaggeryand other ingredients and boil over low flame till the consistency of chutney becomes thick.

Serve tikia, ghugni, chutney and green salad separately. In this way, one can enjoy the taste of all the items prepared.
