Ingredients

  1. 3 cupsblueberries
  2. 1 tsplemon zest
  3. 1/2lemon juiced
  4. 1 1/2 tspcornstarch
  5. 1 1/2 cupssugar, divided
  6. 1 cupAP flour
  7. 1 1/2 tspbaking powder
  8. 1/2 tspsalt
  9. 1/2 cup melted butter
  10. 1 tspvanilla
  11. 1 cup whole milk

Steps

  1. 1

    Preheat 375°
    Grease 8x8” baking dish with butter

    Add 3 cups blueberries, lemon zest, 1/2 cup sugar, & 1 1/2 tsp of cornstarch to a bowl.
    Stir and let sit until juices form (about 10 minutes)

    In a separate bowl add 1 cup AP flour, remaining 1 cup sugar, 1 1/2 tsp baking powder, & 1/2 tsp salt. Add 1 cup whole milk, 1/2 cup melted butter, and vanilla. Stir until we’ll combined.

    Pour batter into the baking dish. Spoon the blueberries on top of the batter.

    Bake for 35-45 minutes or until crust is golden

  6. 6

    Let cool for 10 minutes.

  7. 7

    Serve warm with vanilla ice cream
