Ingredients

  1. 1chicken breast, sliced horizontally, butterflied and pounded into two thin halves
  2. 4 Slicesparma or other ham
  3. 2 Tbscrumbled blue cheese, vegan or dairy
  4. 2 Tbsparmesan cheese
  5. 2fresh asparagus stalks
  6. 1/2 cupbreadcrumbs
  7. 2 Tbsolive oil
  8. Pinchflaked seasalt
  9. Pinchground pepper
  10. Pinchnutmeg
  11. Equipment: oven baking sheet
  12. Cost: chicken $1, ham 50 cents, cheeses, other $1, $2.25 per meal

Cooking Instructions

20 minutes
  1. 1

    Butterfly chicken breast, slice open horizontally, pound flat with mallet.

    Sprinkle blue cheese inside two thin slices of ham sparingly, wrap around asparagus stalk, roll into chicken breast after rubbing inside with pepper, salt and nutmeg, close with a toothpick. crust with olive oil and mix of bread crumbs and sprinkling of parmesan cheese.

    Preheat oven to 400F degrees, bake rolls 20 minutes till golden, remove toothpicks, serve on fresh baked sour dough french bread.
