Make a checklist, keep all ingredients with in reach
Marinade: In a bowl, add paneer, salt. mustard oil, red chili powder, a pinch of asafetida and marinate it well. about 20 mins
Add green bell pepper, orange bell pepper, onion and mix everything well. Let them absorb the spice mixture well. - 2
For Hung Curd Mixture I made the hung curd by bundling 3c home made curd in a cheese cloth and let it drain overnight in the refrigerator. For details please refer to my tips in the cookpad website.
In a bowl, add hung curd, mayonnaise, red chili powder, a pinch of asafetida, pinch of cumin powder, and coriander powder. salt to taste, Mix with roasted gram flour. combine them well
Transfer the marinated paneer mixture into the bowl and mix everything well. Keep aside at least for 10 minutes. - 3
Dough: In a bowl, take flour., salt to taste, curd. Add ghee, make a crumble with your fingers. Add water little by little and knead by stretching and tucking to make a soft dough. ag Cover it with a damp cloth and rest at least for 10 minutes.

Masala: In a bowl, add black cardamom, green cardamom, black peppercorns, cloves, and coriander seeds. Add cumin seeds, fennel seeds, red chilies. Dry roast in a saucepan over medium low heat until aromatic. Blend to powder. salt to taste, add crushed kasthuri methi leaves, and crushed dry mint leaves.
For Salad In a bowl, add sliced onion, green chili, cilantro, salt to taste, lemon juice and mix well - 5
Paneer Tikka
Skewer the marinated vegetables and paneer, alternate vegi and paneer when loading the skewer and set aside till in use. Heat ghee on a grill pan, once it's hot, roast the prepared paneer tikka skewers on the grill pan. Brushing with ghee and cook from all sides. Keep turning the skewer to cook all sides uniformly. Transfer the cooked tikka to the plate and keep aside for further use.

Green chutney: heat oil in a sauce pan over medium heat. Add green chilies, cilantro and mint leaves. Wilt until aromatic. Remove from heat
Remove from heat. Blend in a blender with 2tbsp water to make a thick smooth paste. Salt to taste. Set aside in a bowl - 7
Roti Knead the dough on a lightly floured chapathi stone. Make balls of lemon size. Take a roll it thin using a rolling pin. Stretch while rolling.
Heat a cast iron skillet over medium low heat. Grease with ghee or oil as you please. and roast it on both sides, apply some ghee and cook until light brown from both sides. - 8
Place a roasted chapathi back on the skillet greased with ghee or oil over medium heat. place the prepared paneer tikka skewer on the chapathi. remove the wooden skewer. Spread 1/2c salad. 2tsp masala. 2 tbsp chutney, Roll. brush with ghee. roast for a minute. Remove and place on a serving plate. Serve hot. Enjoy the aromatic flavorful. spicy and tasty kathi roll
