Hairy Bikers All-In-One Spicy Pork and Rice

This is one of our favourite meals from one of the Hairy Bikers recipe books. It's so tasty. The chorizo adds a depth of flavour to it. It just looks so colourful too. We often batch cook this and it freezes really well for a quick midweek microwave meal. Recently we've also started making it with chicken and it's just as good.

Ingredients

prep 15 minutes, cooking time 30 minutes
4-5 people
  • 2 tspolive oil
  • 1medium onion sliced into wedges
  • 500 gpork steaks or 4 chicken breasts, cut into 1cm slices
  • 50 gcubed chorizo sausage
  • 2garlic cloves, thinly sliced or use garlic paste
  • 1red and 1 orange pepper, deseeded and sliced
  • 100 gfrozen green beans, trimmed and cut into short lengths
  • 1 tspground cumin
  • 1 tspground coriander
  • 1/2 tsphot chilli powder
  • 150 glong-grain rice
  • 750 mlchicken stock
  • flaked sea salt
  • freshly ground black pepper

Steps

prep 15 minutes, cooking time 30 minutes
  1. 1

    Prepare the onion and peppers. Add the frozen green beans to a jug and pour over boiling water to start to defrost them. Season the pork (or chicken) with salt and freshly ground pepper. Make the chicken stock.

    Heat the 2 tsp olive oil in a large, non-stick frying pan or wok. Fry the onion wedges over a medium-high heat for 3 minutes until they're softened, stirring regularly.

    Add the seasoned pork (or chicken) to the pan and stir-fry with the onion for 2 minutes until lightly browned.

    Drain the green beans and cut shorter if needed whilst in the jug.

    Add the chorizo, 2 cloves of garlic, peppers and green beans to the pan and stir-fry together for 2 minutes more.

    Sprinkle over the 1 tsp ground cumin, 1 tsp ground coriander and 1/2 tsp hot chilli powder and stir in the rice, then pour over the stock and bring to the boil.

    Reduce the heat to a simmer and cook for 20 minutes, stirring regularly, until the liquid has been absorbed and the rice and pork (or chicken) are lovely and tender. Serve and enjoy.
