I wanted to make something that was a bit macrobiotic, healthy and delicious. Even if something is healthy, if it doesn't taste that good... it's not worth eating. Apparently beet sugar is good in macrobiotic cooking. Try reducing the sugar, or using honey, maple syrup, or cane sugar instead - sounds healthy.

Even thought these puddings have no cream in them, they're really rich and delicious. They contain cocoa polyphenols, soy isoflavones, calcium, and vegetable proteins. On top of that, gelatin contains collagen! If you decrease the soy milk a tiny bit and add brandy or rum, it's really delicious. For 4 servings. Recipe by Asamato

Ingredients

4 servings
  1. 100 gramsSilken tofu
  2. 200 mlSoy milk
  3. 30 gramsCocoa powder
  4. 50 gramsSugar (or beet sugar)
  5. 5 gramsGelatin

Cooking Instructions

    Soak the gelatin in 2 tablespoons of water (not listed) until softened.

    Add the cocoa powder to the tofu, and mix well until it forms a paste.

  3. 3

    Add 50ml of soy milk to loosen the paste.

  4. 4

    Put the sugar, gelatin, and 50 ml of soy milk in a pan and heat until dissolved. Don't let it boil.

  5. 5

    Add the remaining 100ml of soy milk to the pan from Step 4.

  6. 6

    Add the soy milk to the chocolate tofu little by little, mixing continuously.

  7. 7

    Pour into small molds or bowls and chill to set. It's rich tasting and delicious. You can bring down your stress levels when you're on a diet in a tasty way!
