Fresh Raw Turmeric or Kachchi Haldi is a Rhizome that has a vibrant and a spicier taste and is therefore used in cooking as well.
It contains a compound called Curcumin which is the main antioxidant and can be easily absorbed by the body when fresh Turmeric is used. Good quality Turmeric powder also contains Curcumin but the potency will be lower in comparison. It can be stored in a cool and a dry place for over 2 Years without much deterioration.
It can be used in various dishes. As little as half a teaspoon of it is enough and is absolutely beneficial to the body. It can be used in Rice dishes, Soups, Herbal Tea, Marinades, Stews, Sauces etc.
It can even be used in Milk for keeping cold and cough at bay in Winters. It's called Golden Milk or Haldi Doodh.
The benefits are innumerable and hence should be consumed on a daily basis and should be used in in our everyday cooking for the whole family.

Steps

Wash and pat them dry before cutting or grating. I had grated the raw turmeric because it becomes easier to dry as well as grind it into a fine powder.

Arrange the grated raw turmeric or the kachchi haldi on a wide plate or a tray. Dry it under the sun as required.

It normally takes 2-3 days to dry up well. If you have adequate sunlight access in your home, then it's absolutely fine. But if not, then you may require a few more days for it to dry up fully. That's it.

Store it in airtight containers as it is if you prefer to use it that way. I always keep half of it as it is and grind the other half to a fine powder. Use it as required.
