Cut the bell pepper into 2 halves and remove the seeds. Blanch. Immerse first in boiling water for a couple of minutes, drain. Place them in ice water to stop the cooking. Drain and Remove Blanching will keep the color green.

Heat oil in a heavy bottomed pan over medium heat and add mustard seeds. Let the seeds splutter, about a minute. Stir in cumin seeds, fenugreek seeds, turmeric powder, curry leaves. Add ginger, garlic, green chilies, and onions. When the onion turns brown, add the masala powder and stir. Add salt, coriander leaves and stir and switch off the stove. Add cooked dal, cooked rice and mix well, taste. Add salt if required and mix, Dal rice is ready for stuffing

Grease the inside and outside of the bell pepper with a brush. Stuff the bell peppers with ½ c prepared dal rice. Place the stuffed bell peppers on a microwave safe plate. Top the bell peppers with 2 tablespoon cheese. Now microwave it. After the cheese melts (takes 3-4 minutes) take it out. You may sprinkle freshly ground pepper on the top. Let cool. Taste. Serve for the eating pleasure of your kids

Tip:
If you don't have a microwave, grease a skillet over medium heat and place the stuffed bell peppers on the skillet. Cook covered; remove after the cheese melts.
