A lighter version of moussaka, perfect for lunch or dinner.

Slice the potatoes into rounds and boil them until they are halfway cooked.

Meanwhile, slice the eggplants, bell peppers, and 2 of the chili peppers. Brush them lightly with oil, then place them on a nonstick baking sheet and roast on both sides until slightly browned. You can also brown the potatoes if you like.

Sauté the ground beef with the onion and 1 teaspoon of butter. Blend the tomatoes, 1 chili pepper, 2 garlic cloves, 1 teaspoon salt, 1/2 teaspoon cumin, and a pinch of sugar together, then add this mixture to the beef and mix well.

Layer the potatoes in a baking dish, add some of the sauce, then layer the eggplant and peppers, and top with the remaining sauce.

Cover with foil if desired and bake in the oven for 1 hour, until everything is tender and the flavors are combined.
