Mrs Wyrm recently discovered a very nice squid ink pasta at an expensive restaurant here and this is my partially successful attempt to replicate it. 🦑🦪🍝🇮🇹

Mrs Wyrm recently discovered a very nice squid ink pasta at an expensive restaurant here and this is my partially successful attempt to replicate it. 🦑🦪🍝🇮🇹
Steps

Cook pasta according to package directions. Reserve 1 cup of pasta water.

In a pan on medium heat melt butter. Sauté scallops for 1-2 minutes, set aside on top of the cooked pasta.

Add sun dried tomatoes to the same pan. Season with Calabrian chili, and sauté for 3 minutes. Add garlic, cook for another minute more.

Add reserved pasta water, honey, and lemon juice. Season with salt and pepper. Simmer on medium low heat until sauce thickens slightly, about 5 to 7 minutes.

Mix sauce into pasta and scallops, toss well. Top with tobiko and Parmesan.
