Oven roasted whiting with rosemary and lemon

Wash the whiting fish under running cold water
- 2
Pat dry with a kitchen towel, make 3 or 2 crosswise slashes down to the bone on each side, then rub the fish with olive oil, salt and black pepper from outside and inside the belly too

Fill the fish belly with lemon slices and a sprig of rosemary. Place on a baking paper and roast in a preheated oven at 220C for around 20 - 25 minutes. Add a squeeze of lemon upon serving and enjoy!
