Ingredients

  • 3 cTortellini Pasta
  • white sauce:
  • 1/4 cupOil (olive oil preferably)
  • 1/4 cuponions
  • 1 tspginger chopped
  • 6 clovesgarlic, chopped
  • 1grren chili
  • 6 cupsheavy cream
  • 2 cupsCheese, shredded
  • 1 tspItalian dry herb mix
  • Garnish:
  • 1 table spoonbasil, or cilantro chopped
  • 1/4 cyellow bell pepper, finely chopped
  • 1/4 cgreen bell pepper, finely chopped
  • requiredSalt
  • 1 teaspoonpepper powder
  • pasta

    Prepare a checklist. Keep the necessary items near the cooking area.

    In a dry grinder mixie jar, place finely chopped onion, green chili, ginger, and garlic cloves. Grind together, Keep aside
    Boil 8c water in a pan with a teaspoon of salt and oil. Add the pasta to it. Stir now and then to prevent lumping. Do not overcook. Cook until soft, el dente. Remove with a slotted spoon and place in a large shallow plate. Stir in curd. Do not throw away the water in which pasta was cooked

    Make the sauce. Heat oil in sauce panover medium heat, Dissole 1 tbsp all-purpose flour in ½ c of water. Add this to the hot oil. Keep stirring. Add milk and stir for 4 minutes bring it to boil. Add the dried herbs. Add onion ginger garlic green chili mixture. Stir, and continue cooking for a minute or two. Add cheese, simmer. Let the cheese melt. Add salt if needed and stir. Mix everything well and when the sauce is ready turn off the stove.

    Pour the sauce over the pasta in the bowl. Sprinkle pepper powder. I garnished ½ of the pasta with chopped bell peppers in addition to basil from my garden.

    If you like cheese add 1/2c shredded cheese. Keep the bowl in microwave. Cook until the cheese melts. Pasta looks delicious and aromatic with silky smooth cream sauce Taste and serve. If desired, sprinkle some more cheese on top while eating. Enjoy
