Ingredients

12 servings
  1. 1 cupwater
  2. 1/2 cupbutter
  3. 1/2 tspsalt
  4. 1 cupflour
  5. 4eggs
  6. Filling:
  7. 1/2 cupsugar
  8. 1/2 cupflour
  9. 1/4 tspsalt
  10. 3egg yolks, beaten
  11. 3 cupmilk (if using almond milk cut back to 2 cups)
  12. 2 tbspbutter
  13. 1 tspreal vanilla

Cooking Instructions

    Make filling first so it can chill

    Whisk eggs in a bowl and set aside

  3. 3

    In medium sauce pan over medium heat mix sugar, flour, salt, and milk

  4. 4

    Stir until dissolved and cook over medium heat, stirring constantly

  5. 5

    While briskly whisking, slowly pour some of this mixture into the eggs to temper them

  6. 6

    Pour egg mixture back into sauce pan and mix thoroughly. Bring back to a simmer, stirring constantly

    Once it bubbles, cook 3 minutes or until thickened

  8. 8

    Remove from heat and add butter and vanilla and mix thoroughly

  9. 9

    Pour into bowl and cover with plastic wrap pressed against the top of the pudding so skin does not form

    Preheat oven to 400

    In medium sauce pan add 1/2 cup water and butter

  12. 12

    Heat until butter is just melted and add flour

  13. 13

    Stir in flour until dough ball forms

  14. 14

    Remove from heat and let stand 5 minutes

  15. 15

    Add eggs one at a time, stirring vigorously between each addition to incorporate air into the dough

    Scoop by tablespoon onto parchment lined baking sheets

    Bake 40 minutes or until top of puffs have no moisture and are golden

  18. 18

    Cool puffs on wire racks

  19. 19

    Once filling is cold, fill each puff no more than 2 hours before service or puffs will get soggy

  20. 20

    Puffs can be sprinkled with powdered sugar or drizzled with melted chocolate
