Govindbhog rice is a short/medium grain rice with a beautiful aroma and popular rice for sweet dishes like kheer/pudding, sweet rice.

The most popular and delicious sweet recipe of Govinda rice is kheer/payesh/pudding with date palm jaggery. The preparation is easy but takes time as the kheer is cooked in medium to low flame. No need to add cardamom powder for flavour. The Govindbhog as well as Date palm jaggery (Nolen Gurh) both have district scent and flavour. For the delicate structure and sweet flavour of Govindbhog rice, it is popular in West Bengal and many traditional recipes can be prepared including sweet Khichdi.

Ingredients

45-60 minutes
4-5 servings
  1. 1/4 cupGovindbhog rice
  2. 1 ltrfull cream milk
  3. 3/4 cupDate palm jaggery (Nolen Gurh)
  4. 1/4 Tspsalt
  5. 4-5roasted cashews
  6. 2 Tspghee (clarified butter)
  7. Chopped pista and almond to garnish

Steps

45-60 minutes
  1. 1

    Arrange and assemble the ingredients. Heat milk to boil. Add soaked Govindbhog rice and salt. Stir frequently to avoid sticking to the bottom of the pot.

    Where eighty percent of the rice is cooked in the milk, switch off the flame,allow to cool a bit. Add jaggery/ Nolen Gurh little at a time. Stir well and mix the jaggery with the milk. Roast cashews in ghee.

    Allow to boil and cook till thickens of pudding is visible.

    Switch off the flame, allow it to cool, garnish with chopped dry fruits and roasted cashews. Keep in the refrigerator and serve, enjoy like ice cream.
