Ingredients

6 hours

1/2an onion, diced
2carrots sliced and diced
2-3potatoes diced
2red peppers diced
Vegetable stock

Steps

6 hours

Peel and chop all ingredients and pop them in the slow cooker

Add vegetable stock to the pot and put the slow cooker on high and leave for 5-6 hours

Halfway through cooking, add a bit of parsley and some seasoning

After 5-6 hours blend the soup and add seasoning if necessary

Serve
