Ingredients

35 minutes
10 vadas
  1. For vada
  2. 2 cupsboiled, peeled and mashed potatoes
  3. 1 tbspoil
  4. 2 tspginger-green chilli paste
  5. 1/4 tspturmeric powder (haldi)
  6. 1 tbspchopped coriander (dhania)
  7. 2 tsplemon juice
  8. 2 tspsugar
  9. salt to taste
  10. Oil for deep frying
  11. For batter
  12. 1 cupbesan (bengal gram flour)
  13. 1/4 tspchilli powder
  14. 1 tbspoil
  15. 1 pinchasafoetida (hing)
  16. 1 pinchbaking soda
  17. salt to taste
  18. For garnish
  19. Ketchup
  20. Green chutney
  21. Red chutney

Steps

    To make batata vada, heat the oil in a broad pan, add the ginger-green chilli paste, turmeric powder, coriander, lemon juice, potatoes, sugar and salt, mix well and sauté on a medium flame for 3 to 4 minutes.

    Remove from the flame, cool and divide the mixture into 10 equal portions.

    Roll out each portion into a round and keep aside.

    Heat the oil in a kadhai. Dip the potato rounds in the prepared batter and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides.

    Drain the batata vada on absorbent paper and serve hot with green chutney.
