Steps
- 1
Rinse sabudana lightly twice or thrice draining all the water. Then soak the rinsed pearls in 2 to 2.5 cups water for 5 hours at least or overnight.
- 2
They are softened well, draining all the water from the soaked sabudana. They would get mashed easily with a floury texture on your fingers.
- 3
Add peanuts to a heavy pan and begin to roast them on a medium heat until golden and aromatic. Turn off and cool them.
- 4
Make a coarse powder. Just pulse then once in a blender. We want coarse powder.
- 5
To the bowl of Sabudana add mashed potatoes.
- 6
Add ginger chili paste, coriander leaves and crushed peanuts.
- 7
Add rock salt, lemon juice and cumin powder.
- 8
Mix everything well. If sticky, then just grease your finger lightly. Mixing well helps in binding the dough well and prevents the Sabudana Vada from breaking while frying. Make equal size balls from the dough.
- 9
Heat oil in a pan until oil turns hot enough. Gently slide Sabudana Vada to hot oil. Let them fry on a medium heat for a few minutes and firm up. Fry until golden and crisp on both sides.
- 10
Serve Sabudana Vada pops with green chutney or falahari green chutney.
