Oatmeal and Coconut Cookies

I love the texture of oatmeal and coconut so I combined them and made these treats while referring to my favourite chef's recipe.

The photo shows it with raisins. Dried fruit becomes bitter when burned, so it might be better to put the fruit in the middle of the dough when you are shaping it.
The baking time is only a guide. Adjust according to the size of the cookies and the type of oven. For 1 baking tray's worth. Recipe by Soraten mama

Ingredients

6 servings
  1. 70 grams☆ Oatmeal
  2. 30 grams☆Cake flour
  3. 30 grams☆Sugar
  4. 1 pinch☆Salt
  5. 2 tbspCanola oil
  6. 2 tbspWater
  7. 30 gramsDried and shredded coconut
  8. 20 gramsDried fruits (Raisins, prunes, figs etc.)

Steps

    Grind the oatmeal in a blender. Cut the dry fruits to the size of raisins.

    Mix the dry ingredients marked with ☆.

    Add oil to the mixture from Step 2. Rub together and then mix.

    Add water, and when it's no longer floury, add coconut and dried fruit and combine together.

    It will be crumbly and difficult to hold together, but press firmly with your fingers and shape into 1 cm rounds.

    Bake in a 320F/160C oven for around 30 minutes.
