Peak courgette season here so any inspiration is always welcome. Spotted this on Instagram. Super simple and effective.
Steps

Half your courgette and take a nice sharp knife and score the flesh in a nice hatched pattern like so.

Preheat the oven to 200°C.
- 3
Rub over some nice salt and let it sit for 20 mins or so to draw our some of the moisture. Wipe off excess salt before cooking.

Heat the oil in an oven proof frying pan and once hot place the courgette in flesh down for 5 mins.

Carefully flip over the courgette and place the pan in the preheated oven for another 5 mins.

Flip the courgette again and return to the oven for a final 5 mins.
- 7
Plate up. Top with crumbled feta and chopped fresh mint. And some olive oil obviously.
