  • 4 cupsmixed salad greens (about 120 grams)
  • 1ripe mango
  • 6cherry tomatoes
  • 2hard-boiled eggs
  • Apple cider vinegar
  • 2 tablespoonsextra virgin olive oil
  • Iodized salt
  • Freshly ground black pepper

Steps

30 minutes
  1. 1

    Clean, wash, and dry the salad greens. Place them in a large bowl and add the cherry tomatoes, cut in half, and the mango, diced.

  2. 2

    Dress with olive oil and apple cider vinegar; toss gently to combine.

  3. 3

    Add the hard-boiled eggs, cut into wedges. Season with salt and pepper, and serve.

  4. 4

    Complete the meal with 1/2 cup parboiled rice (about 80 grams).
