Homemade Winter Melon Tea (Reduced Sugar Version)

I bought a huge winter melon and decided to use half of it to make winter melon tea. Most recipes online for this concentrated winter melon syrup use a lot of sugar—of course, since it's a concentrate meant to be diluted with water. But I wanted a stronger winter melon flavor and less sugar, so it's safer for kids to drink. I used about half the sugar of a typical recipe. A standard ratio is winter melon: brown sugar (or rock sugar): black sugar = 4:3:1. If you want to try the regular version, you can use that ratio. I really like this reduced sugar version—the winter melon flavor is light and refreshing, and it's especially good with a splash of lemon!

Ingredients

30 minutes
  1. Winter melon, about 1 1/3 lbs (600 grams)
  2. 1 cuplight brown sugar (200 grams)
  3. 1/2 cupblack sugar (100 grams)

    Peel and seed the winter melon, then cut it into pieces.

    Blend the winter melon in a blender or food processor until it becomes a puree. If it's hard to blend, add a little water—I used 1 tablespoon.

    Add all the sugar and mix well.

    Place the mixture in a rice cooker. Add 2 rice cups of water to the outer pot and cook until done.

    Let cool, then refrigerate. It's best to drink within a week. You can also pour it into an ice cube tray to make frozen cubes. Before drinking, dilute with water to taste and add a little lemon juice for extra flavor!
