Ingredients

  1. 5small potatoes
  2. 6pork sausages
  3. 1garlic clove, finely chopped
  4. 1onion, quartered and separated into layers
  5. 4sun-dried tomatoes, chopped
  6. Thyme (to taste)
  7. 4 tablespoonssun-dried tomato and garlic sauce
  8. Halfa mug of peas
  9. Halfa mug of couscous
  10. Olive oil

Steps

    Boil the potatoes: Begin by washing 5 small potatoes thoroughly. Place them in a pot of water and bring to a boil. Allow them to simmer for 20 to 25 minutes, or until they are tender when pierced with a fork.

    Smash 'em: Once the potatoes are cooked, carefully smash them using the underside of a bowl. This creates a rustic texture that will absorb the flavors beautifully.

    Prepare the baking dish:. Place the smashed potatoes onto the tray, creating a base. Arrange 6 pork sausages alongside the potatoes.

    Chop and dice: Enhance the flavours by scattering 1 finely chopped garlic clove over the potatoes and sausages. Quarter an onion and gently separate the layers, then distribute them evenly across the tray. Elevate the taste profile by adding 4 chopped sun-dried tomatoes to the dish. Sprinkle thyme over the ingredients to infuse them with a wonderful aroma.

    Oven time: Preheat your oven to 200°C (390°F). Slide the tray into the oven and bake for 1 hour, allowing the flavours to meld and the sausages to cook thoroughly.

    Peas and tomato sauce: Around the 55-minute mark, introduce extra layers of taste by pouring 4 tablespoons of sun-dried tomato and garlic sauce over the traybake. Toss in half a mug of peas for vibrant color and a touch of sweetness.

    Couscous at the side: As the traybake finishes baking, prepare half a mug of couscous according to the package instructions. Fluff the couscous with a fork to achieve a light texture.

    Chow time: Once the traybake is done, remove it from the oven. The sausages should be golden and inviting. Serve this delectable dish over a bed of couscous, letting the flavors mingle for a truly satisfying meal.
