Sangri curry is favorite among vegeterians. Since green sangri is not available in my city, I have used dry sangri in my recipe. #goldenapron23

Soak dry sangri in water for 2-3 hours. Boil soaked sangri till whistle blows once. Boil potatoes.

In a nonstick pan, add oil and switch on the induction oven. When oil becomes hot, add all the ingredients. Add potato cubes and fry for 2-3 minutes. Add boiled sangri and mix well. Add all the spices and cook for 2mins.

Pour the beaten curd and corn flour mixture into the curry. Add 1/2 cup water and cook for 2-3 minutes. Add some more chili powder if required and mix well. Switch off the oven and transfer the curry into a serving bowl.
