Ingredients

Serves 2-4 servings
  1. 1 piecebarley rusk
  2. 1tomato, diced
  3. 1small cucumber, sliced
  4. 1green bell pepper, diced
  5. 1onion, diced
  6. 3 1/2 oz. (100 grams)anthotyro cheese, diced (or substitute with ricotta or feta)
  7. 1little chopped capers
  8. 6-7Kalamata olives, chopped
  9. Salt, pepper, oregano
  10. Olive oil, to taste
  11. Vinegar

Cooking Instructions

    Lightly moisten the barley rusk with water and break it into pieces in your bowl.

    Add the chopped vegetables, cheese, capers, and olives.

    Sprinkle with salt, pepper, oregano, and drizzle with olive oil and vinegar.
