This beautiful looking easy peasy Zucchini Fry is of Indian style. It is done with a few simple spices used here in the Country. And not only did that make it look beautifully Yellow and bright but also tastes equally delicious and desirable.
With Red Chilli powder and Cumin seeds, it turned out to be super tempting and yum.
The Zucchini or Courgette or Baby marrow is a Summer squash. It has a mild flavour, slightly sweet and slightly bitter. Though it can be eaten raw, it's absolutely flavourful even when cooked and enjoyed as a delicious meal. It gets done so easily.

Therefore I have preferred to fry it for a yummy Breakfast on a weekend.
Both Yellow and Green varieties are available aplenty.
It's a versatile squash rich in Vitamins, Minerals and Plant compounds. High in Fiber and antioxidants, it improves digestion and reduces the risk of type 2 Diabetes. It has a low calorie count which makes it the most loved Veggie with all those health conscious people and fitness freaks out there.

It's a perfect choice for any day. Sauteed or roasted Zucchini also is perfect. Zucchini Bread is a good one too. There are many such delightful dishes one can enjoy making with this amazing Vegetable.

Ingredients

20-25 minutes
4 servings
  • 2nos Yellow Zucchini Courgette or Baby marrow
  • 2 tbspOil
  • 1/2 tspCumin seeds
  • 1/2 tspGinger Garlic Green Chilli paste
  • 1/2 tspSalt
  • 1/2 tspRed Chilli powder
  • 1/4 tspTurmeric powder
  • 1/4 tspCoriander powder
  • 2 tbspchopped Coriander Leaves

Steps

20-25 minutes
  1. 1

    In a pan, heat some oil and add the ginger garlic green chilli paste. Saute it for a few seconds and then add in the cumin seeds as well. Saute all of that for a minute and then finally add in the halved zucchini slices.

    Also add all the powdered spices too. Cover and cook on a low flame for 10-12 minutes. Do not add water. Cover and cook on a low heat. That's it. It will be done easily. It is done in about 20 to 25 minutes in all and doesn't take much time.

    Relish this awesome dish well garnished with chopped coriander leaves. Or dried parsley or mint. Serve hot as a delicious side dish to many an important meals. Yum!
