Super soft, melt-in-mouth, spongy and delicious! 1 plate may be enough for 1 person when served for breakfast

Take water in the dhokla pot and put on the stove to heat up. Keep it covered. Brush dhokla plate with oil. Keep aside.

Take the batter in a bowl. Add salt and eno and pour about ¼+/- cup water over the eno. (the consistency of the batter should be between idli and dhosa check clip 1 and 3 to compare the consistencybefore and after adding water). Combine it thoroughly so thelat the salt and the eno are evenly combines in the batter. But mix very gently so you are not breaking the air bubbles.

Pour half the batter in the dhokla plate,sprinkle black pepper and transfer it to the dhokla pot (there should be much steam in the pot).cover immediately and cook for 5 min over medium heat.

Remove the plate from the pot after 5 min. Brush some oil on it. Let it rest for 3min. Make criss cross cuts. Serve immediately. I also had some tali available so I applied it over it. It tasted delicious.
