Ingredients

Overnight for mock duck, 1 1/2 hour soup
4 people, 4 bowls
  1. 1 poundsmoked mock duck, shredded, made from:
  2. 1 cupwheatberries or 2 cups spelt wheat flour
  3. 1/2 cupvegetable broth
  4. 1/4 cupred wine
  5. 1 Tbsceleriac sauce or Maggi flavoring
  6. 1 Tbsdark soy sauce
  7. 1 Tbslight soy sauce
  8. 1 Tbsrice vinegar
  9. 1 Tbshoisin sauce
  10. 1 Tbssweet red paprika powder
  11. 8 dropsWright liquid hickory smoke
  12. 1 Tbsolive oil
  13. Wild Rice soup made of:
  14. 1/2 cupwild rice
  15. 1yellow onion, ring sliced, panfried
  16. 2 cupsvegetable broth
  17. 1dried woodear mushroom, soaked and slivered
  18. 1/2 cupshiitake mushrooms
  19. 1diced green onion
  20. 1/2 cupchopped flat italian parsley
  21. 1 Tbsolive oil
  22. For the Tofu croutons:
  23. 1/2 cupdiced firm tofu
  24. 1elephant garlic clove, minced
  25. 1 Tbssesame oil
  26. Equipment: 2 cast iron dutch ovens, 1 cast iron skillet
  27. Cost: mock duck 60 cents, wild rice 25 cents, vegetable broth 50 cents, mushrooms, other vegetables $1, a full dinner under a dollar

Cooking Instructions

Overnight for mock duck, 1 1/2 hour soup

    Make the vegan mock duck: buy 1/2 pound of spelt wheat flour or grind 1 cup of wheatberries, make dough with vegetable broth, soy sauces, hoisin, celeriac flavoring, wine, vinegar, paprika powder. Rest dough overnight to develop gluten. Squeeze dough in 2 cups cold vegetable broth to remove the starch, save the broth. Work the liquid smoke through the dough.

    Panfry the mock duck, the onion slices and the mushrooms, then the tofu croutons in olive oil. Shred the mock duck.

    Simmer the soup. Prepare the wild rice soup: boil 1/2 cup well rinsed wild rice in cup of water till soft, about an hour. Add cooked rice to sauteed mushrooms and browned onions with 2 cups of water and 2 cups saved vegetable broth, add shredded mock duck, green onion, parsley, heat thoroughly without boiling, serve with sourdough bread and tofu croutons on the side. Enjoy.
