Jerusalem Artichokes or Sunchokes are no way related to the Artichokes or Jerusalem in particular. It's a tall native Sunflower with edible tubers and has a great crop potential. These are also called Earth Apples. These tubers look like a cross between Potatoes and Ginger. They are versatile and can be relished in so many ways. Many chefs have used them extensively in both savoury and sweet dishes. They have a sweet nutty flavour with a hint of Vanilla.
They became popular in Europe, especially in France where it's still a common menu item today. The name probably must have come from the original Italian settlers who called them Girasole meaning Sunflower in Italian.
These are no way related to either Artichokes or Jerusalem. The name has been such that many even don't know about it. But of course it's a well known one in the Europe. And thanks to the exports and the cultivation techniques, many varieties of Vegetables and Fruits are now made available in different Countries thus providing and opening up new avenues in Agriculture and farming methods. It's called as Hathipich in India.

Steps
- 1
Wash and clean them thoroughly before slicing and there is no need to peel the skin. But if desired one can do it. It's completely optional. Slice them thinly and set aside until use.
- 2
In a pan, heat up olive oil on a low. Add sliced garlic cloves. If they are small, they can be added whole as well. Now add a chopped onion. Saute until translucent and soft. To this add the chilli garlic and soy sauces both. Mix and finally add the jerusalem artichokes.
- 3
Also add salt and pepper to taste. Cover and cook until tender. It usually takes 15-18 minutes. And then sprinkle some chopped coriander or parsley leaves on top. Give a good mix. Also adjust salt and pepper. Now roast for about 5-6 minutes on a medium high until brown and crisp.

That's it. Delicious and wholesome side dish is all ready to be served with any Indian Bread or Rice. You will love it's mildly sweet, nutty and subtle flavours a lot. Enjoy! Yum!
