Take sugar in a thick bottomed vessel add milk and let it boil.

When it comes to a boil, add chenna in it and turn off the gas. Give a good mix to chenna and add ghee, dry coconut stir and turn on the gas.

Stir constantly. When the coconut soack all the milk and became dry add essence and red food colour and mix well. Turn off the gas.

I have used squeezer top for modak. First place coconut mixture in it put some gulkand on it and cover with some more coconut mixture. After 2 minutes pat and remove. I have used chocolate mould for small modak.
