We sometimes cook Schezwan curry at home with paneer , chicken, and veggies. The Schezwan seeds are a kind of pepper cultivated usually in the mountain region of Nepal , in China , Japan and many other countries. These peppers give a tingling sensation if used in curry, chutney, achar, soup and so on. Some people like this flavour and I am one of them.
I have taken potatoes to make this recipe with Timur seeds as known in Nepal. I am very much acquainted with this seed as I was there for many years. It's a very delicious recipe and goes well with dal and steamed rice/as a snack also.

Roast Schezwan seeds, cumin seeds and kashmiri red chillies. Ground to powder.

Heat mustard oil in a pan. Fry fenugreek seeds on low flame.

Add chopped garlic, green chilli and red chillies and saute till aromatic.

Then add sliced potatoes, salt and turmeric powder. Mix well and cook covered till 90 percent done.

Add 1 Tsp of roasted Schezwan peppers seeds, cumin seeds and dry kashmiri red chilli mix powder and everything will be mixed well with cooked potato slices. Garnish with chopped coriander leaves and serve.

*** Keep the Schezwan, cumin and red chilli mix roasted powder in an air tight container for further use.
