Polenta with cremini mushrooms and feta cheese

Ingredients

  2. 1 Tbsp.olive oil
  3. 1minced garlic clove
  4. 1 Tbsp.diced onions
  5. 6 oz./ 170 gr. Cremini mushrooms, diced
  6. 1 tsp.fresh thyme leaves
  7. 1 tsp.fresh oregano leaves
  8. 2 tsp.chopped parsley
  9. 2 c.water with 1 chicken bouillon or chicken broth
  10. 2 c.milk
  11. 1 tsp.salt
  12. 1/4 tsp.ground pepper
  13. 1 c.polenta (corn meal)
  14. 3 tsp.butter
  15. 1/2 cupdiced feta cheese
  16. topping
  17. 1/3 cupdiced feta cheese
  18. 1/3 cupdiced tomatoes cut in half lengthwise
  19. 1 Tbsp.chopped cilantro
  20. 1 tsp.olive oil
  21. 1/2 tsp.lemon extract

Cooking Instructions

  1. 1

    Heat the oil in a cooking pot and sauté garlic and onions until transparent.
    Add and sweat the cremini mushrooms with the herbs.

    Incorporate chicken broth, milk, salt and pepper. Bring the liquid to a boil.
    Lower the flame and slowly add the corn flour and whisk it at the same time.

    Add butter, feta cheese and mix.
    You can serve the polenta the way it is or put it in molds.
    Brush some butter in ramequins dishes and fill with the polenta. Let it rest a couple minutes and put it upside down on a plate.

    Decorate de top with the topping ingredients.
    Serve immediately..
