Cornmeal Dhokla is a quintessential Rajasthani dish is made of makai ka atta (maize flour or yellow cornmeal )which is a good source of antioxidant carotenoids, minerals and vitamins.The moong dal is also rich with protein and iron. Supplementing these nutrients, I added some peas, carrot ,chilies, ginger and methi or spinach to enhance the flavor and texture.

First of all prepare all the vegetables. Sieve the cornmeal. Add all the spices, carom seeds,vegetables, oil and baking soda to it. Mix everything.

Now make medium dough with warm water and keep it covered for 10 minutes. Then take a ball and flatten it in the palm like tikki and make a hole in the middle.

To prepare all the dhokla in this way. Grease the idli stand with oil and put all the dhokla in the steamer for 15 to 17 minutes, then check and remove it.

Apply hot ghee to these cornmeal Dhokla only when they are hot. So it tastes very good.

So the delicious cornmeal dhokla is ready. It can be served with Rajasthani dal and chutney.
