1/3 cupsugar
1/2 cupsteel cut oats
1/2 cupunsweetened desiccated coconut

Preheat the oven to 350F.

In a bowl combine all the peanut butter, sugar, oats, coconut, egg and vanilla to form smooth dough like mixture.

Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies.

Bake until golden around the edges, about 10 minutes.

Transfer to racks to cool.
