Oregano Pork Chops with Sautéed Potatoes and Broccoli

In a small bowl, mix the seasonings and rub them onto the pork chops. Let sit for 20 minutes at room temperature.

Heat a grill pan or skillet over medium heat with a little olive oil. Sear and cook the pork chops on both sides. Serve with sautéed potatoes and broccoli with butter and lemon.

To prepare the broccoli: Bring enough water to a boil in a pot to cover the broccoli. Once boiling, add the broccoli, cover, let it boil briefly, then drain. Immediately add cold water and ice to stop the cooking and keep the broccoli bright green. Remove from the water and let drain.

In a small saucepan over very low heat, melt the butter with the lemon juice, salt, and pepper. Whisk well so it doesn't separate. Pour immediately over the broccoli and serve.
