Soak white lobia in enough drinking water overnight for best results. Pressure cook for just one whistle. Do not add much water. Add the same water in which they were soaked. The remaining water can be used in curries and gravies. Or also to knead the dough for chapatis.

Heat oil in a pan. Add black mustard seeds and curry leaves. After they crackle and well done, add par boiled lobia. Also stir in the powdered spices as mentioned.

Mix well and cover. Let it cook for about 10-12 minutes or until soft and flavourful. They get done very quickly. If you prefer a little crisp lobia, then saute them for a little longer.

Otherwise soft yet firm and yummy lobia fry is ready in a few minutes.
