Grapefruit ( Pomelo) or Batabi Lebu is a big citrus with a smooth, thick yellow-white peel.It is rich in Vitamin C and antioxidants. It reduces cholesterol and has immense health benefits.The flavor is light-bitter and when cooked to make chutney or jam, it makes a delicious spread for bread,rotis, wraps and a yummy accompaniment for rice and dal. The colour varies from bright red to yellow-orange variety of grapefruits.

Peel, deseed and discard seeds,pith and membrane only keeping the juicy pulp.This is important as all other parts of the grapefruit are very bitter.Cut into segments which are disintegrated. Heat oil in a wok.Add dry red chilli and mustard seeds.When they splutter, add sugar, salt, turmeric and Kashmiri Red Chilli Powder and 1 cup water.Boil till it is reduced to half.

Now add the disintegrated grapefruit segments.Grapefruit releases lots of water.

Let all this simmer for 10 minutes till grapefruit mixes with the masala sugar syrup water and is sticky. Add juice of 1 lemon.Also add 1 tsp tamarind paste if the chutney isn't sour.The taste should be sweet,sour and tangy with a hint of heat from Kashmiri Red Chilli Powder. Sprinkle 1 tsp dry roasted and ground bhaja masala and mix.

Garnish with cashewnuts,raisins and dry red chilli. Cool and serve chilled.
