Serve lamb with polenta, rice, wrap or roti (whatever available).
Gather all ingredients. We have ready ingredients in the kitchen and the lamb is thawed. Put it outside to thaw the night before.

A. 🍖 THE LAMB 🍖
Wash the lamb, pat dry and rub lamb with enough chicken bouillon. Heat 1 tbsp of oil in a pan over high heat, lightly brown the lamb, turning often so all the sides are seared. It took us around 5-6mins. Transfer straight to a slow cooker. - 3
Add thinly sliced onion to the same pan used to brown the lamb. Cook until the onion is caramelized or well sauteed, around 1 to 2 mins over high heat. Transfer to the slow cooker. Throw in some bay leaves, cinnamon sticks, baby potatoes and water. Cover and cook in the slow cooker on high for 5-6 hours.

📝 NOTES
1. You can add any dried herbs to your lamb.
2. Be generous with your seasonings. You can use salt and pepper instead of chicken bouillon but using chicken bouillon is highly recommended.
3. Use water if you do not have broth or stock.
4. Add carrots and other root vegetables. If you like peas, add it last when the meat is almost cooked.
5. Add turmeric powder for aromatic lamb.
6. Serve with polenta, rice, wraps, bread, pitas or rotis.

The lamb juice as Gravy (This is optional)
Transfer out the lamb and potatoes to a serving plate. Discard bay leaves and cinnamon sticks. Pour the juice together with the onion into a saucepan. Leave to simmer over medium heat. In a small bowl, combine and mix 1/2 tsp to 1 tsp of corn flour with few TBSP of water. Add this solution to the saucepan. Stir, season with a pinch of salt, pepper and sugar (sugar is OPTIONAL). Stir until thicken then blend until smooth in a blender. Done.

B. EASY POLENTA
Gather all ingredients.
Heat 2 1/2 cups of milk in a pot. Simmer until the milk is hot enough. Before it reaches boiling point, add 1/2 cup of instant polenta.

Over medium heat, continue to cook and stir until it thickens. Add a generous pinch of salt and 2 tbsp of salted butter. Keep stirring so it won't stick to the pan/pot. Once it slightly thickens, taste and adjust seasonings accordingly. When it reaches to a thick puree consistency, remove it from the heat. Serve hot.

📝 NOTES:
1. You can add a TBSP of grated parmesan to your polenta. If using parmesan, omit salt as parmesan is salty enough.
2. You can prepare polenta with water or your preferred milk.
3. Polenta thickens once cooled. Adjust consistency to your liking.
4. Polenta is also great for breakfast as it's fast and easy to cook.
