Boil bananas for 12 to 15 minutes or until soft. Set aside. Sift dry ingredients in a bowl. Mix well. Set aside.

Mash bananas in a big bowl, add egg, vanilla extract, and milk. Mix well. Gradually add dry ingredients while mixing. Continue mixing until all ingredients are well distributed.

Heat oil in a pan. Scoop1/2 cup of banana mixture. Fry until the color turns light to medium brown. Flip the banana fritter. Cook the opposite side for the same duration.

Remove from the pan and let it cool down. Dredge both sides of the fritter in sugar. Serve!
