Soak the bird's nest for about 30 minutes until it softens and expands. Do not soak for too long or it will lose nutrients. Remove any feathers and clean thoroughly. For 5 jars, 1 large nest is enough as it expands a lot. If using smaller nests, use 2.

Soak the goji berries, red dates, and dried longan for 10-15 minutes until they soften. This helps them cook faster. If you prefer to cut and pit the red dates, you can skip soaking. Rinse everything well and set aside. Rinse the cordyceps and set aside for steaming. Chia seeds can be soaked for 5 minutes if you like, or just add them directly to the jars at the end.

Wash the glass jars thoroughly to sterilize them. Let them dry upside down.

To make the ingredients tender before adding the bird's nest (so the nest doesn't overcook), place a pot on the stove and add the water. Peel and lightly crush the ginger, then add it to the pot to help remove any fishy smell from the bird's nest and add fragrance. When the water boils, add the red dates and dried longan. After about 5 minutes, add the goji berries and rock sugar. Let it boil until the sugar dissolves. Taste and adjust sweetness, then turn off the heat.

Divide the cleaned bird's nest evenly among the jars. You can weigh each jar for even portions, or just divide by eye.

Evenly distribute the cooked ingredients and broth into the jars, then cover with lids.

Prepare a pot for steaming. Steam the jars for about 10 minutes, then add the chia seeds and steam for another 5 minutes. Turn off the heat. This keeps the bird's nest strands chewy and intact.
