Mixed Salad

After returning from a trip, I often make diet-friendly dishes like this one. I fill up on lots of healthy veggies—sometimes just a boiled corn and an egg is enough to keep me full all day.

After returning from a trip, I often make diet-friendly dishes like this one. I fill up on lots of healthy veggies—sometimes just a boiled corn and an egg is enough to keep me full all day.
Steps
- 1
Wash and drain the lettuce, then cut it into bite-sized pieces. Boil the corn and egg until cooked. Remove the corn kernels from the cob. Season the chicken breast with 1 tablespoon garlic salt and 1 tablespoon cooking oil, then lightly pan-fry. For a crispier texture, finish cooking the chicken in an air fryer until golden. Cut the cooked chicken into small pieces.
- 2
Arrange the lettuce on a plate, then top with the chicken, corn kernels, and thinly sliced egg. Drizzle with Ranch dressing and sprinkle with black pepper to finish.
