Heat the oven to 170°C

Make a parcel out of tin foil using a piece of foil large enough to fold over. Dollop some butter onto the foil before laying the salmon skin side down.

Add more butter on to the salmon then add some thyme and slices of lemon (fennel also works well)
- 4
Wrap the tin foil tightly around the salmon and seasoning before placing in the oven and cooking for 30 minutes

You can serve with potatoes, peas, broccoli or all of the above.
